Both forms are correct.
We say la tipica colazione to sound more natural and to emphasize tipica: puts more emphasis on tipica, almost like saying “the typical kind of breakfast” in general.
La colazione tipica is also fine, puts more emphasis on colazione, and tipica simply describes it (“the breakfast that is typical of…”).
